Leftover Christmas ham pasta carbonara

I mentioned last week that I had bought a 5kg leg of smoked ham.  We had 1.5kg leftover so I used some of it to make carbonara tonight.


Ingredients:
  • 400g pasta
  • 4 eggs
  • 2 cups diced/shredded ham (you could use leftover turkey)
  • 200g mushrooms, quartered
  • 300mL thickened cream
  • 50mL water
  • big squirt lemon juice
  • 3 tablespoon pine nuts
  • 3 heaped teapoons crushed garlic
  • shaved parmesan
  • bunch continental parsley
  • large pinch salt, pepper and sugar

What to do:
  1. Boil the pasta
  2. Mix eggs, cream, water, some shaved parmesan, lemon juice, salt, sugar and pepper together and set aside
  3. In a large frypan cook ham, pine nuts, garlic and mushrooms for about 5 mins
  4. Once the pasta's cooked, drain and add to the cream mixture
  5. Then add ham to this and mix continuously for a few mins
  6. Serve with more parmesan, chopped parsley, salt and pepper
