Ingredients:
- 400g pasta
- 4 eggs
- 2 cups diced/shredded ham (you could use leftover turkey)
- 200g mushrooms, quartered
- 300mL thickened cream
- 50mL water
- big squirt lemon juice
- 3 tablespoon pine nuts
- 3 heaped teapoons crushed garlic
- shaved parmesan
- bunch continental parsley
- large pinch salt, pepper and sugar

What to do:
- Boil the pasta
- Mix eggs, cream, water, some shaved parmesan, lemon juice, salt, sugar and pepper together and set aside
- In a large frypan cook ham, pine nuts, garlic and mushrooms for about 5 mins
- Once the pasta's cooked, drain and add to the cream mixture
- Then add ham to this and mix continuously for a few mins
- Serve with more parmesan, chopped parsley, salt and pepper
